Colombia as a coffee origin is a real pleasure to work with thanks to the numerous micro-climates throughout the country, we can pretty much buy freshly harvested coffee from the different regions all year round.

The region of Tolima is well known for incredible altitude, steep terrain, and deep valleys which create incredible conditions for coffee production with distinct microclimates and abundant water supply. Los Vascos is a name given to the farmers of Bilbao, it translates to The Basques and refers to the ancestry of the people there who descend from the northern region of Spain. This coffee is wholly shade-grown on smallholdings that vary in size but average around 5 hectares.

Coffee grows amongst plantain, Chachafruto, Guamo, and Nogal trees which provide ample shade and encourage both a diverse ecology and the slow ripening of the coffee cherries which results in this deliciously characterful cup. Once the cherries have been collected, they are processed on each farm’s micro wet mill before being dried in the parchment layer in parabolic dryers.

This stage can be very challenging due to the humid conditions and high rainfall in this region but the result is a coffee with delicious sweetness and a syrupy caramel-like mouthfeel making it super clean and versatile - there are notes of cherry, clementine and brown sugar and it has such great balance.
