High in the Andes, multiple smallholding family famers come together to produce Castillo and Caturra varietals on their small fincas. Yacuanquer’s climate is typical of the mountains of Nariño, bright sunlit mornings, and wet afternoons, and the soil is rocky and rich in minerals. The cherries are hand picked, before undergoing the traditional process - known as el beneficio - of depulping, washing, an 18hr fermentation, followed by a final washing before spending 10 days drying on patios. Coffees from this region are prized for their creamy bodies, and sweet red fruit notes.
